This masterclass are dedicated for professionals who began their adventure with ramen. During class you will learn how to prepare ramen step by step. Dr Kohei Yagi will present you different types of ramen based on traditional clear broth: Shoyu Ramen, Shio Ramen, Tantan Ramen and Mazesoba. You will learn what’s Umami and synergistic effect of Umami. It’ll be also lesson about ramen elements: broth, noodles, chaschu, shio tare, shoyu tare, oil, toppings (vegetable, egg). Our Chef will show you how to serve ramen properly. You will get ramen tips and tricks which help you cooking your own recipes in your professional kitchen and choose ramen recipe depends on your business style.
